Cabot Cheese sent some cheddar bacon cheese that sounded amazing. My first thought when I saw the cheese was cheesy roasted potatoes! I mean potatoes, bacon, and cheese, YUM!

Potatoes On The Grill

I recently got a smoker grill. Now that I live in Florida, I admit, I been grilling all the time now. So playing with roast potatoes on the grill, actually inspired me for a brunch potatoes recipe. Why not take the cheesy roasted potatoes and cook them as potatoes on the grill?

Herb Roasted Potatoes

If I was going to make these brunch potatoes, I knew they had to be more than just cheesy roasted potatoes. They should also be herb roasted potatoes as well!

 

Garlic Rosemary Potatoes

I decided for these brunch potatoes with the Cabot Cheese that my garlic rosemary potatoes would be perfect to make on the grill. Plus the bacon cheddar will give the potatoes that pop of flavor!

Cheesy Roasted Garlic and Rosemary Potatoes

Cheesy Roasted Garlic Rosemary Potatoes

Cheesy Roasted Garlic and Rosemary Potatoes is a great way to make potatoes on the grill! These brunch potatoes are wonderful cheesy roasted potatoes.

Prep Time 10 minutes
Cook Time 45 minutes
Total Time 55 minutes

Ingredients

  • 1 1/2 pounds small red potatoes
  • 1/8 cup olive oil
  • 3/4 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 cloves garlic, minced
  • 2 tablespoons minced fresh rosemary leaves
  • 1 cup Cabot Bacon Cheddar shredded cheese

Instructions

  1. Cut the potatoes in half.
  2. Place in a bowl with the olive oil, salt, pepper, garlic and rosemary; toss until the potatoes are well coated.
  3. Pour the potatoes into a foil baking pan.
  4. Place the pan on the upper shelf of the grill/
  5. Stirring occasionally the potatoes, roast them on a hot grill (400F) for about 40 minutes.
  6. When the potatoes are tender, sprinkle the Cabot bacon cheddar cheese over them.
  7. Close the grill and cook continue cooking for another 5 minutes.
  8. Take the potatoes off the grill and serve them up!

Notes

  1. If you prefer the oven, heat the oven to 400F, place the potatoes on a parchment lined backing sheet and cook for about 50 minutes.
  2. Stir occasional as the potatoes roast in the oven
  3. Then add the cheese, and cook for 5 more minutes.
