I was quiet over the weekend. I do apologize for not posting anything. Truthfully, I escaped to Pittsburgh for a 24-hour trip.

Sometimes I just need to escape Cleveland. Admittingly I feel jumbled right now. Home was needed just to help get me out this funk I am in.

Home helps ground me. That was what I needed. Why am I in this funk? Honestly, I think it is the huge changes in my life right now with work environments. I am much better now, going home help me realize why I was feeling out of sorts. That quick trip to Pittsburgh helped me.

Sometimes people forget I am completely all by myself in Cleveland. I really have no one, there is no family at all here. Most people do not know how I have been able to do this all these years here in Cleveland. Truth is, I do what I have too. This job is the only thing that keeps me here.

So sometimes. I need Pittsburgh. I need to visit home. Sometimes I just need to get everything back in order so I can survive Cleveland

Lemon is a flavor I really do adore. I just simply love lemon. Right now I admit I am on this lemon olive oil kick. I used it in the Blackened Shrimp Pasta. I am a lemon head what can I say?

Ok, that was a bad joke. Seriously, I do love lemon. However, I did date a man who loves lemon flavor more than me, he actually had a bottle of lemon juice on the table and would eat everything with lemon juice! Yep, instead of ketchup, he uses lemon juice. Made a meatloaf for him and he ate it with lemon juice. So I know I am not that bad.

Lemon potatoes are something I really love. Most know them as a greek dish, it is more Mediterranean. The first time I had a lemon potato, I hate to admit this but it was with my ex-husband. It was the one dish he actually would cook for me.

There is something about the sweetness of potatoes with that tart lemon that just goes so well together. I make these lemon potatoes all the time, especially if I am making a chicken dish. I love pairing it with Rosemary Citrus Roast Chicken. These potatoes just compliment that dish fro a side.

Description

Baked Lemon Potato Wedges is a flavorful potato side dish that is loaded with a wonderful lemon flavor. These potatoes will easily become your new favorite side.


Ingredients

  • 1 1/2 lbs red potatoes
  • 1 small onion (minced)
  • 4 garlic cloves (minced)
  • 1 teaspoon dried oregano
  • 1 -1 1/2 teaspoon sea salt
  • 1⁄2-1 teaspoon fresh ground black pepper
  • 2 lemons (juice of)
  • 1 lemon (zest of)
  • 1/4 cup olive oil

Instructions

  1. Wash potatoes and cut into wedges.
  2. Add the onions to the potatoes.
  3. Mix seasonings, lemon juice, zest, and oil together.
  4. Pour the lemon mixture over the potato-onion mixture and toss everything.
  5. Place in an 11×7 cooking dish. Do NOT drain off any extra lemon mixture.
  6. Bake at 400 for 1 hour to 1 hour 15 minutes, turning a couple times during the baking.
  7. take them out the oven, serve them up and ENJOY!

    So glad you got refreshed. First thing I thought of was the stress of your new job. I am a “Lemonhead” too and these potatoes sound amazing and I love the dash of oregano in there to make them savory too.

    When I was recovering from my surgery earlier this winter, a friend’s husband (who is Greek) made me his family’s Lemon Chicken and Potatoes. It was so delicious! I’ll definitely give your version a try! I love cooking with lemon.

    I felt the same way when we were living in Indiana and all my family and friends were down south. Just me. Pregnant and needing my mom!! Sometimes you need an infusion of home to get right again! Glad you got some rest and made these amazing potato wedges!
