Lemon flavor
Lemon flavor anything I really do adore. I just simply love the flavor of lemon. Right now I admit I am on this lemon olive oil kick. I used it in the Blackened Shrimp Pasta. I am a lemon head what can I say?
Ok, that was a bad joke. Seriously, I do love the lemon flavor. However, I did date a man who loves lemon flavor more than me, he actually had a bottle of lemon juice on the table and would eat everything with lemon juice! Yep, instead of ketchup, he uses lemon juice. he actually inspired these crispy baked potato wedges.
Lemon potatoes
Lemon potatoes most know them as a Mediterranean dish. The first time I had lemon potatoes, was with my ex-husband. There is something about the sweetness of potatoes with that tart lemon flavor that just goes so well together.
Crispy baked potato wedges
You can deep fry potato wedges, but I choose to make crispy baked potato wedges instead. Why? Well, baked potato wedges are just healthier. Plus if you want to go a step further you could make these potato wedges in an air fryer too.
Potato wedges seasoning
Besides the lemon flavor, the potato wedges seasoning is also garlic and my favorite secret spice, Vegeta! Using the Vegeta as potato wedges seasoning really makes these crispy baked potato wedges stand out!
I make these lemon potatoes all the time, especially if I am making a chicken dish. I love pairing it with Rosemary Citrus Roast Chicken. These potatoes just compliment that dish for a side dish!

Baked Lemon Potato Wedges

Baked Lemon Potato Wedges are flavorful crispy baked potato wedges. These lemon potatoes will easily become your new favorite side.
Ingredients
- 1 1/2 lbs red potatoes
- 1 small onion (minced)
- 4 garlic cloves (minced)
- 1 teaspoon dried oregano
- 1 -1 1/2 teaspoon Vegeta Seasoning
- 1⁄2-1 teaspoon fresh ground black pepper
- 2 lemons (juice of)
- 1 lemon (zest of)
- 1/4 cup olive oil
Instructions
- Wash potatoes and cut into wedges.
- Add the onions to the potatoes.
- Mix seasonings, lemon juice, zest, and oil together.
- Pour the lemon mixture over the potato-onion mixture and toss everything.
- Place in an 11x7 cooking dish. Do NOT drain off any extra lemon mixture.
- Bake at 400 for 1 hour to 1 hour 15 minutes, turning a couple times during the baking.
- take them out the oven, serve them up and ENJOY!

I felt the same way when we were living in Indiana and all my family and friends were down south. Just me. Pregnant and needing my mom!! Sometimes you need an infusion of home to get right again! Glad you got some rest and made these amazing potato wedges!

Lemon is one of my favorite ingredients to add for a little zing while cooking. I've never tried it with potatoes though! Will definitely have to try this!
