Sometimes I just need to escape Cleveland. Admittingly I feel jumbled right now. Home was needed just to help get me out this funk I am in.
Home helps ground me. That was what I needed. Why am I in this funk? Honestly, I think it is the huge changes in my life right now with work environments. I am much better now, going home help me realize why I was feeling out of sorts. That quick trip to Pittsburgh helped me.
Sometimes people forget I am completely all by myself in Cleveland. I really have no one, there is no family at all here. Most people do not know how I have been able to do this all these years here in Cleveland. Truth is, I do what I have too. This job is the only thing that keeps me here.
So sometimes. I need Pittsburgh. I need to visit home. Sometimes I just need to get everything back in order so I can survive Cleveland
Baked Lemon Potato Wedges
Lemon is a flavor I really do adore. I just simply love lemon. Right now I admit I am on this lemon olive oil kick. I used it in the Blackened Shrimp Pasta. I am a lemon head what can I say?
Ok, that was a bad joke. Seriously, I do love lemon. However, I did date a man who loves lemon flavor more than me, he actually had a bottle of lemon juice on the table and would eat everything with lemon juice! Yep, instead of ketchup, he uses lemon juice. Made a meatloaf for him and he ate it with lemon juice. So I know I am not that bad.
Lemon potatoes are something I really love. Most know them as a greek dish, it is more Mediterranean. The first time I had a lemon potato, I hate to admit this but it was with my ex-husband. It was the one dish he actually would cook for me.
There is something about the sweetness of potatoes with that tart lemon that just goes so well together. I make these lemon potatoes all the time, especially if I am making a chicken dish. I love pairing it with Rosemary Citrus Roast Chicken. These potatoes just compliment that dish fro a side.
- 1 1/2 lbs red potatoes
- 1 small onion (minced)
- 4 garlic cloves (minced)
- 1 teaspoon dried oregano
- 1 -1 1/2 teaspoon sea salt
- 1⁄2-1 teaspoon fresh ground black pepper
- 2 lemons (juice of)
- 1 lemon (zest of)
- 1/4 cup olive oil
- Wash potatoes and cut into wedges.
- Add the onions to the potatoes.
- Mix seasonings, lemon juice, zest, and oil together.
- Pour the lemon mixture over the potato-onion mixture and toss everything.
- Place in an 11x7 cooking dish. Do NOT drain off any extra lemon mixture.
- Bake at 400 for 1 hour to 1 hour 15 minutes, turning a couple times during the baking.
