Cranberry Loaf

Cranberry Loaf

Cranberry Loaf is a wonderful moist orange cranberry loaf. This cranberry bread is perfect to make for the holidays to give as a gift to friends.

Active Time 1 hour
Total Time 1 hour 15 minutes

Ingredients

  • 1 orange
  • 1/4 cup orange juice
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 1⁄2 teaspoons baking powder
  • 1⁄2 teaspoon baking soda
  • 1⁄2 teaspoon salt
  • 1 cup chopped fresh cranberries (or frozen)
  • 1 egg, beaten
  • 1⁄4 cup butter, melted

Instructions

  1. Grate rind from orange, squeeze juice into liquid measure, add enough orange juice to make 3/4 cup.
  2. In large bowl, mix flour, sugar, baking powder, baking soda, salt and orange rind.
  3. Stir in cranberries into the flour mixture.
  4. In another small bowl, whisk together egg, butter and orange juice.
  5. Stir the egg mixture into flour mixture just until blended.
  6. Spread in greased 9x5 Loaf pan.
  7. Bake at 350F for 60 minutes or until cake tester comes out clean.
  8. Let cool in pan for 10 minutes, turn out onto rack and let cool completely.
  9. Serve it up and Enjoy, or make ahead and Freeze for up to 2 weeks!

Notes

Adding the additional orange juice amount depends on how much juice you get from the orange.
