I am always looking for better ways to eat and to save money. So I teamed up with Pacific Foods this holiday season to show how using these items in recipes can be better not only for you but the environment as well.

Bacon, Green Onion, and Smoked Gouda Cornbread

Pacific Foods sent me some the basic items we use during the holidays: Chicken Stock, Pumpkin Puree, and Cranberry Sauce. I decided to use the chicken stock into a very savory Bacon, Green Onion, and Smoked Gouda Cornbread recipe. Instead of using beer, IĀ substitutedĀ it with chicken stock to give the cornbread more flavor.

The results were fabulous. ThisĀ Bacon, Green Onion, and Smoked Gouda Cornbread just sung with flavor. To take cornbread to the next level, I added in bacon, green onion, and smoked gouda to the mixture. ThisĀ Bacon, Green Onion, and Smoked Gouda Cornbread would be great to have alongĀ with nice big bowl of chili.

Description

Bacon, Green Onion, and Smoked Gouda Cornbread combine cornbread with bacon, green onion, and smoked Gouda cheese for a delicious bread.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup yellow cornmeal
  • 2 tablespoons sugar
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup Pacific Foods chicken stock
  • 2 eggs
  • 1/3 cup olive oil
  • 1 cup Smoked Gouda cheese shredded
  • 1/3 cup bacon cooked, crisp, and crumbled
  • 2-3 Green onions chopped

Instructions

  1. Preheat oven to 350Ā°F Grease a 9×5 loaf pan.
  2. In a medium bowl, blend together flour, cornmeal, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, beat together eggs, olive oil,onions, Pacific Foods chicken broth, cheese, and bacon. Slowly blend wet ingredients into dry ingredients, mixing just until blended. Batter should be lumpy; do not over mix.
  4. Pour into prepared pan and bake 45 min-1 hour, or until a toothpick inserted comes out clean. Cool in pan for 15 minutes and then invert over rack and remove from pan.
