Pumpkin Week Continues

Pumpkin week continues! So far I am enjoying all the pumpkin recipes this week, are you? LoveandConfections.com has done a wonderful job of putting together this pumpkin extravaganza. Seeing all the pumpkin recipes from the various bloggers have really inspired me on a creative level for recipes.

Birthday

I feel special that this week is pumpkin week because it is also my birthday week. So participating in this week-long event makes me feel like actually celebrating my birthday on Friday. Trust me, I wasn’t really feeling my birthday this year. Why? I do not have good birthdays haven’t for years actually.

It is hard to explain why I have such bad birthdays. One the best examples of a birthday that was bad was

when I posted Crock Pot Cheese Soup. Those old co-workers were just a small example how my birthday always gets forgotten about.

I was born at the wrong time of year is what I got told when I turn 40 and none of my friends or family would throw me a party to celebrate the milestone. Truthfully, this year I was just going to let the day pass by. That was until this week with not only Pumpkin week but on Friday, my actual birthday, I am doing Freaky Friday as well.

Sounds silly but actually taking part in a blogger collaborations helped get me out this funk I was in concerning my birthday. The power of food blogging! Not only will help you create great recipes, it is therapy as well!

I am a fan of old church cookbooks. I have found some really great recipes in those old cookbooks. Well, in one that we got at a church rummage sale, it had a recipe for this Pumpkin Dump Cake in it.

Now, I admit I have never made a dump cake before. This Pumpkin Dump Cake is my first one! When I signed up for this event, I first thought I would do pumpkin fudge.

This dump cake just kept calling my name. What I loved about it, yes it is like a cake, but also like a pudding in a way. The recipe cannot be any simpler, then dump it all in a pan and bake.

This pumpkin dump cake is really wonderful. You will love it. Now I know why, after making this Pumpkin Dump Cake why so many love making dump cake recipes.

Description

Pumpkin Dump Cake is an easy and yummy pumpkin dessert you will love to make. It is simply a dump it all in a cake pan and bake!


Ingredients

  • 1 (29 ounce) can pumpkin
  • 1 (12 ounce) can evaporated milk
  • 1/2 cup sugar
  • 1/2 teaspoon pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • 3 eggs
  • 1 (18 ounce) box yellow cake mix
  • 1 cup pecans, chopped
  • 1 cup butter, melted

Instructions

  • Beat the pumpkin, evaporated milk, sugar, pumpkin pie spice, cinnamon, and eggs together.
  • Pour into a 9×13 inch baking dish.
  • Sprinkle the cake mix evenly over your mixture.
  • Sprinkle the chopped pecans on top.
  • Finally, evenly drizzle the butter on top of this mixture.
  • Bake at 350°F for one hour.
  • Take out the oven, let it cool. Serve it up and ENJOY!

    Happy Birthday Deanna. I suffer from the birthday blues every year. No rhyme or reason for it with me…..at least not that I have been able to figure out. Keeping yourself distracted with these posts is a great idea.

    Happy Birthday week! I would totally make this a WIN for a birthday week, with all this yumminess going on- I haven’t made a dump cake before either, but they look so good, I get it! I will make one soon, since they seem really easy and delish~
