When I was in elementary school when you saw those peanut butter chews on the cafeteria lunch trays it was a good lunch. What are peanut butter chews? They were this peanut butter rice crispy no bake cookie that was yummy.

I have been sitting on no bake cookies with peanut butter for a while. However, I had a friend who suddenly developed a peanut allergy. She said how come every recipe for no bake cookies is no bake cookies with peanut butter? She in a way inspired me to create no bake cookies without peanut butter.
Recipe For No Bake Cookies
If you look at the traditional recipe for no bake cookies, it is chocolate and peanut butter with rolled oats. I see the dilema that peanut allergies have with the classic recipe for no bake cookies. So what can I do to make easy no bake cookies without using peanut butter.
Cookie Butter
So how do you make no-bake cookies without peanut butter? The answer came to me Biscoff’s cookie butter! It has a slightly spicy taste and is perfect to pair with pumpkin for easy pumpkin cookies!
Easy Pumpkin Cookies

No Bake Pumpkin Cookies
No Bake Pumpkin Cookies is a recipe for no bake cookies. These easy pumpkin cookies can be made and ready to eat in minutes! You are going to love these easy no bake cookies
Ingredients
- 1 cup Dixie Crystal sugar
- 3/4 cup light corn syrup
- 1 cup Biscoff's creamy cookie butter
- 1/ 2 teaspoon pumpkin pie spice
- 1/2 cup pumpkin puree
- 6 cups rice crispy cereal
Instructions
- Combine sugar, corn syrup, pumpkin puree, and cookie butter in a large saucepan.
- Heat until mixture comes to a boil, stirring constantly.
- Remove from heat.
- Stir in the rice crispy cereal.
- Drop about 2 tablespoons worth of the cookie mixture onto parchment or wax paper lined cookie sheets.
- Let cool for a few minutes.
- Serve them up and ENJOY!
