I love easy casserole recipes, don’t you? 7 years ago when I was in a cast and started Seduction In The Kitchen, I needed easy casserole recipes. My go-to for most of these recipes were Hash brown patties.
Hash brown patties
I found that using hash brown patties as a case in a hash brown casserole is added more stability to the casserole. The first experiment on my hash brown patties idea was my Hash Brown Ranchero Taco Bake. Turned out my idea of using those patties was a great idea.

The next time I decided I wanted to make a hash brown casserole, I decided to make it into a Reuben casserole. I love Reubens, and potatoes are Irish. Why not make an Irish hash brown casserole?
Reuben casserole
You can see in this Reuben casserole the layers of kraut, swiss cheese, and of course corned beef. This Reuben casserole would not be complete if there weren’t a thousand island dressing in there on top of those hash brown patties!

Irish Hash Brown Bake
Irish Hash Brown Bake is a simple Reuben casserole. This hash brown casserole uses hash brown patties to make this an easy casserole recipe.
Ingredients
- 1 bag of frozen Hash Brown Patties
- 1 package of Hillshire Farms (thinly sliced corned beef)
- 1 small can of saur kraut (drained)
- 1 package of shredded Kraft Swiss cheese
- Thousand Island dressing
Instructions
- Preheat the oven to 375F and in a baking dish, place a single layer of the frozen hash brown patties.
- Place a layer of saur kraut on top of the hash browns.
- Next a generous layer of corned beef.
- Drizzle some the thousand Island dressing on top of everything.
- Next, cover the hash brown bake with shredded Swiss cheese.
- Cover the dish with some foil and bake for about 45 minutes.
- When done, serve it up and ENJOY!
