The special chocolate treats you can make for Valentine’s Day is chocolate covered strawberries. What chocolate for strawberries can you use? Honestly chocolate chips.

Melting Chocolate Chips

The best method for melting chocolate chips I feel is a metal bowl over boiling water. You place the chocolate chips in the bowl and put it on top of a pot with boiling water. Stir until the chocolate chips are smooth and melted.

You can do the melting chocolate chips in a microwave or even in a chocolate melter. I prefer the old candy makers’ method of the bowl and boiling water.

Red Velvet Cake Mix

How to turn this chocolate covered fruit into red velvet? The answer was simple, red velvet cake mix! By dipping this chocolate covered fruit just before the chocolate shell hardens into a little bit of red velvet cake mix gives this strawberry that red velvet taste!

 

Cream Cheese Glaze

If you are going to use a red velvet cake mix on a chocolate covered strawberries, you have to have a cream cheese glaze! How? After a bit of experimenting, I made a cream cheese glaze by melting white chocolate and adding a touch of cream cheese frosting to it.

Then I drizzled on the cream cheese glaze onto the strawberries. This red velvet recipe really looks perfect to be Valentine’s Day chocolates!

Red Velvet Chocolate Covered Strawberries With Cream Cheese Drizzle

Red Velvet Chocolate Covered Strawberries is chocolate strawberries with a red velvet cake mix. Then there is a  cream cheese glaze drizzled onto the chocolate shell of this strawberry. This chocolate covered fruit is amazing!

Ingredients

  • 1 bag (12oz) semi-sweet chocolate chips
  • 1 pint of strawberries
  • 1/ 4-1/2 cup of red velvet cake mix
  • 1/4 white chocolate chips
  • 1 tablespoon cream cheese frosting

Instructions

  1. Wash and dry your strawberries and then set them aside.
  2. Line a cookie sheet with wax paper, set aside.
  3. In a large sauce pan, fill with water and bring it to a boil. Turn ff the heat, and put a metal bowl, slightly larger then opening of the sauce pan on top of it. Put the chocolate chips into it.
  4. Keep stirring the chips until they are melted and smooth.
  5. Take the bowl off the pot.
  6. Holding by the top part the strawberry, dip the strawberry in the melted chocolate.
  7. After you dipped the strawberry in chocolate, then dip the tip of the strawberry into the red velvet cake mix and place the strawberry onto the wax paper cookie sheet. Keep doing this till you got all the strawberries covered.
  8. Place the cookie sheet in your freezer for about 1 hour so the strawberries can set up.
  9. After the chocolate has set up, bring the saucepan back to a boil, then turn off the heat and in another metal bowl, add the white chocolate chips and cream cheese frosting. Stir until the chips are melted and smooth.
  10. Using a fork, drizzle the cream cheese over the strawberries.
  11. Place them in the freezer again for an hour to let them set up again.
  12. Take them out of the freezer and ENJOY!

Notes

There are different ways to melt chocolate, this what I like to do, but you can do a different way if you like to do it that way.
