I realized I was overdoing it, again. Working full time in the day then doing all the blogging stuff at night, exhausted me. So I took some me time.
I just needed to relax. Did some yoga, which I am not good at. It is a good thing I did this YouTube video, because I know I would have been laughed at in a class full of people.
I also went “floating.” Floating is this huge clamshell pod thing that has 800lbs of salt to a foot of water. I felt all my stress simply melt away inside that pod. It was extremely relaxing.
I personally like sweet yogurt parfaits. I love layers of yogurt and fruit together. Sure it is easy to go to McDonald’s and get a dollar parfait.
Making your own yogurt parfait is just better. Why? You can control what you want to layer in the parfait. If you want a crushed Oreos, you can layer crushed Oreos in the parfait.
Lemon Berry Yogurt Parfait
I love lemon flavors. One day I was just sitting around and was like of all the yogurts out there why is there none with lemon on the bottom. Or Lemon that can mic into the yogurt?
I went to the store because they had raspberries and blackberries on sale. I was thinking I might make a nice salad with the berries. Then I saw lemon curd was on sale.
Then it came to me, why not do a berry lemon yogurt parfait? Berries and lemon go well together. Sweet vanilla Greek yogurt would balance the berries and tart of the lemon.
I made up this lemon parfait and was excellent. Truthfully, these yogurt companies should do a lemon mix in for their yogurts. Lemon curd in yogurt is outstanding!
As a bonus, this berry lemon yogurt parfait is a great healthy start to your day. I am not a breakfast eater in the morning, mostly because I am always running off to work. However, making up these parfaits the night before, I can eat a healthy breakfast on the go.
- 1 cup vanilla Greek yogurt
- 1/4 cup raspberries
- 1/4 cup blackberries
- 1/4 cup lemon curd
- In a glass jars place a layer of the vanilla yogurt.
- Next, add a layer of the lemon curd.
- Top the curd with some of the berries.
- Add another layer of the vanilla yogurt.
- Then do the layers again.
- Top the entire parfait off with the vanilla yogurt.
- Serve them up and ENJOY!
The parfaits can be made ahead of time and are good in the fridge for 72 hours.
