International Delights Cake Truffles

The holidays are made for indulging. To be on a diet at the holiday, well that takes incredible will power. With homemade cookies and cakes being passed around, it is very hard to resist. Is it no wonder most people gain weight around the holidays?

With all the baking I have been doing, yep I have gained weight. I decided, there is no use in beating myself up over it. I know it was stress, plus all these goodies I have been making is the cause of my weight gain. So you know what, I am not going to worry about it. Come the new year, it is all about starting over. So I will start a strict 21 day challenge, and start losing weight when the new year begins. In the meantime, let’s enjoy the holidays and all the goodies. Basically, let’s not sweat the small weight gain, just enjoy well life and the rest of 2013. A new start for a new year with a healthy eating is coming up soon.

So, with all these goodies I have been making, I have been taking them to work. I do share my creations with them, hey if I going to gain weight, so should my co-workers! Anyway, one mentioned his wife wants to make truffles, but it seems so complicated. Years ago I used to be very big into cake decorating. I was addicted to watching shows like The Cake Boss, and would learned a lot on how to make cakes from those shows. Cake pops also were coming popular back then, but in all honesty, the recipes to make the balls are well very sweet. The reason is your mixing icing into crumbled cake to make the balls.

Basically a small accident happened when I was trying to take cake scraps and make them into cake pops. I was making coffee, and spilled International creamer into the cake. That accident lead to a great discovery, creamer and cake crumbles make for an excellent truffle center. Plus, with so many different creamer flavors out there, you can come up with so many flavor combinations. The big plus in these truffles is that they are super easy to make.

Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

International Delights Cake Truffles is an easy way to make a homemade Christmas goodie without a lot of work. In fact all you need is 3 ingredients! A recipe from Seduction in the Kitchen.


  • 1 prepared cake (pound cake works well or just make a boxed cake)
  • 1 bottle International Delights Coffee Creamer, any flavor
  • 1 bag chocolate chips


  1. Crumble the prepared cake into a bowl
  2. Pour enough creamer, which is about 1/4 of cup approximately, You just want it to be able to roll the cake into balls. You do not want to be soaking wet. 
  3. Roll the cake mixture into little balls. Place them on a cookie sheet and then set them in the freezer for 30 minutes to help them firm up and are easier for you to cover in the chocolate.
  4. Melt the chocolate chips in a microwave-safe bowl. Microwave the chips on 30-second intervals to melt them. Once they are melted, take the cake balls out the freezer and dip them into the melted chocolate. Cover the balls completely with the melted chocolate. Place the balls on wax paper lined cookie sheets. Once the balls are all covered in chocolate, put them back in the freezer so that the chocolate hardens.
  5. Once the chocolate hardens on them, about 30 minutes, take out the freezer and ENJOY!


You can have fun with different creamer and cake combos. Like Salted Caramel with a chocolate cake
