Gluten Free Sundried Tomatoes and Mushroom Pasta
When I was thinking up what I could do for this challenge. I knew I had got some nice sundried tomatoes and I thought why not do a saute pasta. Plus I love mushrooms and well mushrooms to me just make pasta better.
Using the coconut oil, I saute the onions, mushrooms, garlic, and sundried tomatoes. Add a bit more of a flavor of lemon and these veggies really popped. The aroma as it was cooking really made the kitchen smell like heaven.
Then, of course, once you add that gluten-free pasta to the sundried tomato mixture, you have one fulfilling dish. Truthfully, the pasta was very good with this Gluten Free Sundried Tomatoes and Mushroom Pasta. I would have never known it was gluten-free.

Gluten Free Sundried Tomatoes and Mushroom Pasta
Gluten Free Sundried Tomatoes and Mushroom Pasta was challenged to me by Tresomega Nutrition to create a healthy recipe. Using gluten-free pasta and coconut oil, this pasta is simply wonderful.
Ingredients
- 2 Tablespoons Coconut Oil
- 1 onion, sliced thin
- 6 oz mushrooms, sliced
- 2 gloves arlic, minced
- 1/4 cup sundried tomatoes
- 1/ 4 cup lemon juice
- 16 oz gluten free pasta
- 1/4 teaspoon garlic salt
- 1/4 teaspoon pepper
- 1 Tablespoon grated parmesean
Instructions
In a pot of water, cook the gluten free pasta according to the directions. Drain and set aside.
Next, in a saute pan melt the coconut oil.
Add the mushrooms and onions and saute them until the onions turn translucent.
Add the garlic and sundried tomatoes.
Cook and continue stirring the mixture for about a minute.
Next add the salt, pepper and lemon juice to the mixture.
Give a good stir and then add the pasta.
Make sure pasta gets coated with the sundried tomato mixture.
Stir and cook the pasta for another minute.
Take off the heat, sprinkle on the top the grated parmesan.
Serve it up and ENJOY!
