Ho Ho Ho! Now does this Dark Chocolate Peppermint Crunch cookie look festive? This cookie is actually special. Why is it special you may ask? Well, it was the cookie I made for a Food Blogger Love Cookie Exchange!
You see I was sent 3 other food bloggers, and I had to send them a dozen cookies. Originally I wanted to send another cookie. Now you will see that cookie later on in the 12 days of cookie recipes.
However, the timing of when I had to get a cookie done to be shipped out and with the huge grand opening of the hospital. I ran out time to make the original cookie. So I decided to make one that is a bit simpler.
As I said I had to send out to 3 food bloggers. So that means I got 3 different cookie dozens sent to me. Would you like to see the yummy cookies I was sent? Well then here you go:

They all look so yummy. I am including each one in my cookie trays that I am whipping up so my friends and family can enjoy these homemade goodies! I like to share, it is who I am!
Dark Chocolate Peppermint Crunch Cookies
So on this day 7 of my 12 days of cookies recipes, I bring you Dark Chocolate Peppermint Crunch Cookies. These are a basic drop cookie, like chocolate chip. I choose dark chocolate because, well I am kind of loving dark chocolate. Dark chocolate in sweet treats to me tastes better. The bitter really evens out the sweet.

- 1 1/2 cups packed brown sugar
- 3/4 cup butter soften
- 12 ounces dark chocolate chips
- 2 large eggs
- 3 cups flour
- 1 1/4 tsp baking soda
- 1 tsp salt
- 1/2 cup crushed peppermint candies Andees has a good one that I like to use
Cream the brown sugar and butter together till nice and fluffy. Set aside
Melt the chocolate chips, then add the melted chocolate to the butter mixture.
Next, add eggs one at a time, beating well after each addition.
Stir in flour, baking soda and salt.
Finally, add the peppermint crunch. Stir this in by hand.
Drop by rounded teaspoon onto ungreased baking sheets.
Preheat the oven to 350F and bake for 6 to 8 minutes or until edges are set
Cool on baking sheets for 1 minute. Remove unto wire racks and cool.
Serve them up and ENJOY!
