admit I wanted to put this out sooner, but I have
was preoccupied. There is a lot going on at work. We are once again short-handed and there was an inspection, and it starting to wear me out.
 
Trust me when I say there is so much that goes on behind the scenes in healthcare that you don’t see. Sometimes it does get the best of a healthcare worker. Which is what was happening with me.

Corned Beef Brisket

 
We all have little traditions and superstitions in. Sometimes they come from your family, sometimes you adopt them on your own. St Patrick’s Day here in Cleveland it is corned beef brisket.
 
Being Irish, the superstitions and traditions here, you have to make a corned beef brisket on March 17. Why? Well, the corned beef brisket tradition is part of St Patrick’s day fun.

I am part Irish. If you could not tell by my fair complexion, reddish hair, and green eyes. Even though my family is Irish, we never had corned beef brisket.
 
Since corned beef and cabbage crock pot recipe is a must in Cleveland, I now make it. I said this in the past, my family growing up liked the bland food. I admit I am the oddball in the family, I embrace change and I am willing to try things.

I have a small obsession with apple cider. I love cooking with it. When I make my corned beef and cabbage recipe crock pot style, I made it with apple cider. The result was this tender corned beef brisket with a sweet yet savory taste to it.

Description

Corned Beef in a savory apple cider that is made in a slow cooker. One bite and your mouth will be in love with it. A recipe from Seduction in the Kitchen.


Ingredients

  • 4 cups Apple Cider
  • 2 tablespoons brown sugar
  • 1 tablespoon stone ground mustard
  • 2 cloves garlic (minced)
  • 1/2 teaspoon fresh ground pepper
  • 1 large onion (cut into quarters)
  • 3 lbs corned beef brisket (with spices)
  • 8 small red potatoes cut into quarters
  • 1 pounds head cabbage (cored and cut into 10 wedges)
  • 1 cup baby carrots

Instructions

  1. Combine the apple cider, sugar, pepper, mustard, spice packet of the corned beef, and garlic, in a 6 qt crock pot and mix well.
  2. Place corned beef and onions in the mixture. Scatter the potatoes and carrots over the top and along the sides.
  3. Cover and cook on high heat setting 4 hours.
  4. Remove the lid and scatter the cabbage wedges over the top.
  5. Cover and continue cooking on high 3-4 hours longer, or until beef is tender.
