Lemon Pound Cake {Easy Pound Cake Loaf Recipe}

Lemon pound cake is an easy pound cake loaf recipe. The lemon flavor really makes this pound cake recipe stand out. 

What is pound cake?

Growing up, my mom would love to get this pound cake loaf from this local bakery. The pound cake loaf was a dense, rich buttery loaf that tasted oh so good.

But what is pound cake? A pound cake recipe is a cake traditionally made with a pound of each of four ingredients:

• flour
• butter
• eggs
• sugar

When blended together you have this rich buttery tasting cake. That is why they call it a pound cake recipe.

Lemon flavor

I love the lemon flavor. One of the best pound cake recipes I have ever enjoyed had lemon flavor. A lemon pound cake is perfect to make around the springtime.

Why? The lemon flavor really compliments strawberries. Most people will use a pound cake loaf as part of a strawberry shortcake. 

When you put the strawberries on top of a lemon pound cake, you will have a flavor explosion. They make for a wonderful dessert.

Lemon pound cake loaf

You can make this lemon pound cake loaf in a loaf pan or you can also use a tube pan as well. I prefer the lemon pound cake loaf form because I like the slices for making a strawberry short cake.

Using a tube pan works well too, but the slices are not squared off. The lemon pound cake will be curved, which is fine to eat as well.

Tube pan pound cakes tend to bake faster I have found up. Where a pound cake loaf tends to bake a little longer. I think this is because the tube pans make the center narrower. Where the loaf pans make the pound cake batter centers are spread out more.

Lemon Pound Cake

Lemon Pound Cake is a rich buttery cake loaded with lots of lemon flavor. This cake is perfect snack with a cup of coffee.

Prep Time 10 minutes

Cook Time 1 hour

Total Time 1 hour 10 minutes

Ingredients

• 1 cup butter
• 1 1/2 cups cake flour
• 1 teaspoon baking powder
• 1/2 teaspoon salt
• 1 1/4 cups sugar
• Zest of whole lemon
• Juice of a whole lemon
• 4 large eggs
• 1 1/2 teaspoons vanilla extract
• 1/2 cup sugar
• 1/4 cup fresh lemon juice
• 1 tablespoon lemon zest

Instructions

Preheat oven to 350°.

Grease 9 x 5-inch loaf pan with 1 tablespoon of soft butter.

Dust pan with cake flour.

Mix together flour, baking powder and salt.

In food processor, process sugar and lemon zest until combined.

In a mixing bowl add the butter and sugar mixture. Cream together until it is light and fluffy.

Add lemon juice, eggs and vanilla, process until combined.

Sift flour mixture over eggs in three steps, whisking gently after each addition until just combined.

Pour batter into prepared pan.

Bake for 15 minutes at 350°F.

Reduce oven temperature to 325°F and continue to bake until deep golden brown and skewer in center comes out clean (about 35 minutes).

Cool in pan for 10 minutes.

Turn onto wire rack.

While cake cooling bring sugar, lemon juice and zest to boil in small saucepan.

Stir occasionally to dissolve sugar.

Reduce heat to low and simmer until thickened slightly, about 2 minutes.

With toothpick poke holes on all sides of cake.

Brush on Lemon Glaze.

Allow to cool at room temperature at least one hour before serving.

Slice it up and ENJOY!
