I was in a car accident last night. I admit I am waiting on phone calls and a rental car to arrive. So to keep busy I am writing a new post. I always said I write in real time. That is what I am doing right now.
It was a weird accident. There were 4 vehicles involved. The long story short version is I was pulling out of work onto a very busy main road. I needed to go down the road but the traffic was very long going up the road.
The cars were stopping because the light turned red. A woman in a car stopped to let me pull out. She motioned that was clear for me to do so. I pulled out slowly took a look and saw nothing was coming down. So I proceeded to pull out and turn left so can go down the road.
Suddenly this truck, which was in the line to go up the road decided to get out the line and come full speed at me. He beeped his horn at me and actually went on the other side the road so he could pass me. As he was doing that, the truck rear passenger wheel clipped my front passenger bumper.
Which blew his tire out and he spun out control. He then hit another car on the driver’s side. Then he ricochets off an another car’s rear bumper on the side.
Police said there is no doubt he was speeding. The other 2 drivers said he was speeding. Let’s put this way he was going so fast when he hit the cars he actually had cinder blocks in this truck and they flew out of the truck. We found them in the street broken.
I was told I most likely will be blamed for hitting his truck. Even though he was speeding and was on the wrong side the road. It is because I was on private property pulling out, 9 times out of 10 it is always the one pulls out fault was what I was told. Just have to wait and see what happens.

The woman the truck hit she hugged me and said good luck, admitted she felt the whole thing was his fault, because how fast he was driving. It 35 on the road and he had to be doing at least 50, looking at all the damage and position of cars.

Yes, that is correct. Let me explain I can not eat chicken on a bone. I have been like that since was a kid. I don’t know why but just will not eat chicken on a bone, but if boneless I will eat it.
Wings, most the time have bones, so I simply don’t eat them. A few years ago I found out boneless wings is just boneless chicken breasts cut up. This is actually what I can eat. So I will eat wings, but only boneless types of wings.

This Blackened Peach and Raspberry Boneless Wings Recipe actually came about by mistake. I was trying to do another recipe that sort of failed. I was making, in all honesty, a potato chip crusted wing, the potato chips sort of fell off. So was stuck with what do I do now type of thing.
So looking around the kitchen and spotted peach preserves and raspberry syrup. The idea hit me. Why not melt it down make a glaze and add blackened seasoning to it?

This was a good accident. The potato chip idea wasn’t working, but it did lead to a new recipe. An accident that leads to something good is always a bonus.
- 1 cup sour cream
- 1 tablespoon blackened seasoning
- 1 lb boneless chicken breasts (thin sliced)
- 1/4 cup peach preserves
- 2 tablespoons raspberry Nature Nate Raspberry syrup
- 1 tablespoon blackened seasoning
- Cut the chicken breasts into strips, about an inch wide.
- In a bowl, mix the sour cream with the blackened seasoning
- Next, dip the chicken into the sour cream mixture, covering the strips on both sides with it.
- Place on a medium hot grill, and grill covered for about 20 minutes. Turning the wings every so often.
- While the wings grill, make the glaze by adding the peach preserves and the raspberry syrup into a sauce pan.
- Cook on medium stirring till the preserves melt.
- Add the blackened seasoning to the glaze, and mix it all together. Take off the heat and set aside
- Once the wings are done on the grill, add to a bowl
- Pour the glaze over the wings and toss to coat them in the glaze.
- Serve them up. Make sure save some the glaze for dipping and ENJOY!
