Recipe Development
[dropcap custom_class=”normal”] I [/dropcap] was contacted by a representative from JSL Foods about coming up with a soup recipe for their Chef Yaki contest using their Fortune udon noodles. I love a challenge so I said yes. Also, I love coming up with new recipes for products.

Japanese Onion Mushroom Udon Soup
When this contest was presented to me, my first thought was I would do a updated version of my Hawaiian Saimin Soup. That after all does use udon noodles in it. The more I thought about it plus, I admit the mushroom flavored Fortune udon noodles kept calling out to me, I decided to be inspired by Hibachi restaurants.
I was at one recently, and I was served this Japanese onion mushroom soup. It was really good and it looked so simple to make. Knowing that these noodles cook up within minutes, I decided to do a fancier version of that soup.
Using the mushroom flavor packet from the udon with some of ANGELO PIETRO sesame miso dressing and also the ginger dressing as well. I picked those up at the Fabulous Food Show in November and been waiting for an excuse to use these in a recipe. The broth just came out so wonderfully good.
Besides this wonderful Oriental flavor of this Japanese Onion Mushroom Udon Soup, you can whip it up within 15 minutes. So now that we have these chilly winter days now, this soup will warm you up within minutes. Plus it is also very filling.

Japanese Onion Mushroom Udon Soup
Japanese Onion Mushroom Udon Soup is a wonderful Oriental flavored simple soup that you can make within 15 minutes. This soup will warm you up on the chilliest of nights.
Ingredients
- 1 pkg (7 oz) Fortune Mushroom Udon Noodles
- 1 teaspoon Angelo Pietro Sesame and Miso Dressing
- 1 teaspoon Angelo Pietro Ginger Dressing
- 1 tablespoon cooking sherry
- 4 cups chicken broth
- 1 clove garlic, minced
- 1/2 carrot, shredded
- 4 whole mushrooms, sliced thin
- 3 green onions, chopped
Instructions
In a large pot combine the mushroom seasoning packet of the udon noodles with the chicken broth.
Next add the Angelo Pietro Sesame and Miso and the Angelo Pietro Ginger Dressings.
Finally, add the cooking sherry give everything a stir so that the seasoning packet is dissolved in the broth.
Stir in the green onions, garlic, mushrooms, and carrot.
Bring the broth to a boil and add the udon noodles.
Bring the heat down so the soup simmers for about 3-4 minutes.
Take the soup off the heat, ladle it into a bowl, serve it up and ENJOY!

Look in the ethnic area of the supermarket for them. I actually am starting to prefer them in chicken noodle soup now. They really good!
