It is Christmas eve, and I am in Pittsburgh with my family. It is so nice to have 3 days off from work and all the Cleveland drama. It is rare to get three days off in a row at Christmas in healthcare. It happened this year because how the holiday fell.
This week at work, so much unnecessary drama was going on. Partially why I have not written a post this week. It is because that drama was really ticking me off. I knew it would translate into a bitchy post. I did not want to do that.
I did realize something with that drama. I realized that the reason most the drama takes place like it does at work is that people do not listen and pay attention. They only hear their viewpoint and not that of others. Also, they need to look outside the four walls that surround them. That there are surroundings, that may be different, and possibly could be better beyond those walls.
So, I am glad I get to be home and just relax. It is nice to talk my Pittsburghese and not explain my words. Plus it is nice to be around family.
I did recently team up with YIAH, or Your Inspiration At Home to introduce their flavors of spices, and bottles of vinegar. As I mentioned in the Black Forest Chocolate Chip Cherry Cookies, I fell in love with their products at the Fabulous Food Show. I really love the flavors that they have in the balsamic.
Admittingly, I am a balsamic freak. I simply love balsamic. So when I got a bottle of the Honey Caramelised Balsamic from YIAH, I knew I wanted to use it on an eye of round roast.
Honey Caramelised Balsamic Roast Beef
Sunday’s in my family we have always have had a roast for Sunday dinner. So I wanted to make a roast, with a gravy, that is perfect for Sunday dinner. I wanted to make a tangy gravy with the Honey Caramelised Balsamic from YIAH.
I wanted to let the eye of round cook all day in the slow cooker so that this roast would be so tender. I love tender roast beef. It simply melts in your mouth.
Using a can of golden mushroom soup, I set about creating this tangy balsamic sauce that the roast can cook in. The aroma coming from the slow cooker made my apartment smell so good. Right, there is a sign that this would be a great roast. I served it up with mashed potatoes and poured this Honey Caramelised Balsamic gravy on them and this meal was licked the plate good.
