So what puppy did mom and dad pick to add to our family? Are you ready to meet the newest member? Well here you go:

Yep, they got 2 puppies! The boy puppy, Oscar. When they first got to the place, the woman who ran it told them that Bailey, the girl, is the runt and she has a heart murmur and also a hernia as well. Well, no one wanted her because they were scared by this. My mom told her that if this woman could not find Bailey a home, to call my mom and they would take her. They left with Oscar.

My dad could not decide on the ride home what to call him, he liked the names Oscar and Bailey, so he was going to be called Oscar Bailey, yes, we do give middle names to our pets. About 2 hours after they got Oscar, the phone rang, yep it was the woman at the rescue, she could not find Bailey a home, and she was willing to give her to my mom and dad for free. She could tell my parents would be good parents for Bailey and knew they would love her. So they went back up and got her. So she became Bailey, and Oscar is Oscar. Right now the middle names are Bailey Boop and Oscar Meyer.  So here you go officially meet:

They will find out about Ms. Bailey and this heart murmur, she got a vet appointment with Oscar to be checked out. She is very active and they really adjusted to my parents. They so loving and smart puppies. Everything happens for a reason, and these guys were for my mom and dad.

It is funny how simple little things in life can bring you pure please, like a puppy, or puppies. These two little guys brought a simple pleasure to my parents. They help breathe a new life into them. They were feeling so bad over the loss of their beloved dog of 13 years. The simple pleasure of owning a dog has helped them heal so much.

Simple pleasures or even a simple little thing can be the most powerful thing one can do. It a simple little change that can make a huge impact. That can be true in food word as well. Simply changing up a food can make a big impact.

I love tomatoes. A simple tomato salad is tomatoes with maybe some onions with bleu cheese dressing. I want to change it up, why not add some roasted mushrooms to the mix, and change out onions to shallots. The simple changes made for an outstanding salad.

Roasted Mushroom and Tomato Salad

Preparation 10 minutes
Cook Time 10 minutes
Total Time 20 minutes
Serves 2     adjust servings

Roasted Mushroom and Tomato Salad From Seduction in the Kitchen

Ingredients

  • 2 tomatoes sliced
  • 8 oz sliced mushrooms
  • 2 tablespoons olive oil
  • 2 cloves garlic miced
  • 1 English cucumber sliced
  • 1 shallot sliced
  • 2 tablespoons Bleu Cheese Dressing
  • salt and pepper to taste

Instructions

  1. Arrange on a plate the sliced tomatoes.
  2. In between the tomato slices, add a cucumber slice. The plate should look like it alternating a tomato and cucumber slices.
  3. In a sauce pan, heat up the olive oil. Add the mushrooms, and start to roast them for about 2 minutes.
  4. Next add the minced garlic, continue roasting for about next one to two minutes. Take the mushrooms off the heat.
  5. Spoon the mushroom mixture over the tomato and cucumbers.
  6. Sprinkle the shallots over everything.
  7. Last drizzle the bleu cheese dressing over everything.
  8. Serve it up and ENJOY!
