This Pesto Portabello Chicken Burger is an alternative to a juicy beefy burger. It is pesto and chopped portabello mushrooms mixed with ground chicken for this savory burger. Then this chicken burger is topped with melted Asiago cheese, for a melt in your mouth type of burger.

Chicken Burger

I wanted to do an alternative¬†burger. Don’t¬†get me wrong I love beef, but sometimes you crave something different, like chicken. So creating a chicken burger is what I wanted to make for my second burger month recipe.

Pesto Portobello Chicken Burger

The inspiration behind this pesto burger came from the farmer’s market. There is this organic free-range chicken vendor who makes this amazing chicken sausage. He has this pesto chicken sausage and also he makes a portobello¬†chicken patty.

I actually got both of these chicken dishes and, put them together for a sandwich one night. The flavor of pesto, portobello, and chicken was phenomenal. That was when the idea of let’s make a chicken burger with these flavors.

Pesto and Portobello

I knew by using pesto and portobello in a ground chicken burger, this would be an Italian flavored burger. What is Italian that I could use to really make this burger recipe pop with flavor? Asiago was the first ingredient that came to my mind.

 

Then, it would need a condiment that would just take this pesto and portobello recipe over the top in yumminess. What would compliment this chicken recipe? Lemon aioli was the answer. It just balances out this pesto and portobello chicken burger.

Pesto Portabello Chicken Burger Recipe

Description

This Pesto Portabello Chicken Burger is an alternative to a juicy beefy burger. It is pesto and chopped portabello mushrooms mixed with ground chicken for this savory burger. Then this chicken burger is topped with melted Asiago cheese, for a melt in your mouth type of burger.


Ingredients

  • 1 lb ground chicken
  • 1/4 cup chopped portobello mushrooms
  • 3 tablespoons pesto
  • 1/4 cup breadcrumbs
  • Brioche hamburger buns
  • Asiago cheese
  • Arugula

Lemon Aioli

  • 3/4 cup mayonnaise
  • 2 garlic cloves, minced
  • 1 teaspoon grated lemon rind
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

Pesto Portobello Chicken Patties

  1. In a bowl, add the ground chicken, portobello mushrooms, pesto, and breadcrumbs.
  2. Mix it up well.
  3. Form into patties and grill the patties until the juices run clear and the chicken burgers reach 165F
  4. When the burgers are done, melt the asiago cheese on the top of them.

Lemon Aioli

  1. In a bowl mix all the lemon aioli ingredients together and set aside.

Assembly

  1. Place the bottom buns on a serving tray.
  2. Place a chicken burger on top the buns
  3. Top with arugula
  4. Butter the top part of the buns with the lemon aioli.
  5. Place the top of the bun on the burger
  6. serve them up and Enjoy!

    I have never put pesto on a burger. And that lemon aioli sounds divine! I’ll be making that for sure.
