This Pesto Portabello Chicken Burger is a healthy alternative to a beef burger. This healthy burger recipe uses ground chicken with pesto to make this a juicy chicken burger recipe. If you like grilled pesto chicken then you love this grilled chicken burger!

Healthy burger recipe

I love burgers like most people. Every year in May I take part in Burger Month. One year I decided I needed to do a healthy burger recipe.  

Most of the burger recipes in Burger Month are these over the top creations. What about doing an over the top healthy burger recipe? That was the challenge I decided to do.

Juicy chicken burger recipe

What kind of alternative burger can I make? A juicy chicken burger recipe is a perfect alternative to a beef burger!  Don’t get me wrong I love beef, but sometimes you crave something different, like chicken. So creating a juicy chicken burger recipe is what I wanted to make for a healthy burger.

Grilled pesto chicken

The inspiration behind this pesto burger came from the farmer’s market. They had grilled pesto chicken and it was amazing! So can I take this vendor’s organic free-range chicken and instead of using his grilled pesto chicken recipe turn it into a pesto chicken burger?

The answer is yes! By using ground chicken and mixing in some chopped portabello mushrooms with pesto was perfect! I was on my way to making this healthy burger!

Pesto and Portobello

By using pesto and portobello with the ground chicken, this would be an Italian flavored burger. What is Italian that I could use to really make this burger recipe pop with flavor? Asiago was the first ingredient that came to my mind.

Then, it would need a condiment that would just take this grilled chicken burger recipe over the top in yumminess. What would compliment this chicken recipe? Lemon aioli was the answer. It just balances out this pesto and portobello chicken burger.

Pesto Portabello Chicken Burger Recipe

Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

This Pesto Portabello Chicken Burger is a healthy alternative to a beef burger. This healthy burger recipe uses ground chicken with pesto to make this a juicy chicken burger recipe. If you like grilled pesto chicken then you love this grilled chicken burger!

Ingredients

  • 1 lb ground chicken
  • 1/4 cup chopped portobello mushrooms
  • 3 tablespoons pesto
  • 1/4 cup breadcrumbs
  • Brioche hamburger buns
  • Asiago cheese
  • Arugula
  • 3/4 cup mayonnaise
  • 2 garlic cloves, minced
  • 1 teaspoon grated lemon rind
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

Pesto Portobello Chicken Patties

  1. In a bowl, add the ground chicken, portobello mushrooms, pesto, and breadcrumbs.
  2. Mix it up well.
  3. Form into patties and grill the patties until the juices run clear and the chicken burgers reach 165F
  4. When the burgers are done, melt the asiago cheese on the top of them.

Lemon Aioli

  1. In a bowl mix all the lemon aioli ingredients together and set aside.

Assembly

  1. Place the bottom buns on a serving tray.
  2. Place a chicken burger on top the buns
  3. Top with arugula
  4. Butter the top part of the buns with the lemon aioli.
  5. Place the top of the bun on the burger
  6. serve them up and Enjoy!
