Bookies or as they are better known as chocolate chip cookie brownies are the best of two worlds. It is part chocolate chip cookie and part fudge brownie and it is sinfully delicious.
Someone asked me recently about what advice I would give to a new blogger. Now I could go with the standards of content is king, quality photos, what plugins to use. Instead, I simply said, “Have A Thick Skin.” The interview person was puzzled as to why I would give that advice. That was until I explained.
Blogging can get very frustrating. You work your ass off, think you got everything down and you see the little reward and wonder what are you doing wrong. Nothing, it just you been only at it a month.
It takes years to get to where you blog is successful. Anyone tells you that you will have 100,000 followers in 30 days is just scamming you to buy their course or eBook. It isn’t reality. Blogging is always changing too.
Food blogging is always changing too. Places you submitted recipes to years ago may no longer be active. A plugin that was the bomb to use 2 years ago hasn’t been updated and it is now defunct. Its constant change and you have to keep up with the changes.
Plus I will be honest there will always be haters. Haters aren’t just people who leave bad comments on your blog. Yes, you will get the comment about how that person doesn’t like an ingredient or the recipe.
The other haters come from fellow food blog peers. It just like in real life you will find cliques in different circles. There are ones that love to help. Others will ignore you but will call you out if you slip-up in any slightest way. Then their ones feel they are above everyone. So yes my advice is to have thick skin, food blogging is a roller coaster, just like life is one.
Bookies: Chocolate Chip Cookie Brownies Recipe
When I first heard this term Bookies, I was at work. Co-workers were bragging about this IT guy there that made his famous Bookies. I had no idea what a bookie was until I was told that it is simply Chocolate Chip Cookie Brownies.
Ok, now I got it. The B in Bookies was for brownies and ookies was for cookies. Actually, this chocolate chip cookie brownie marriage is genius. It is the best of two sinfully delicious treats in one.
Trying this IT man’s famous Bookies made me a huge fan of this chocolate lovers delight. It is simply perfect. The best part is you can use a box brownie mix or you can do this with a homemade king like:

- Pre-heat oven to 350 degrees F.
- Cream butter and sugars in a Medium mixing bowl.
- Add vanilla and egg; cream again until smooth.
- Next stir in the flour, baking soda, and salt with a wooden spoon until fully combined.
- Add chocolate chips. Set aside in the refrigerator.
- Prepare brownie batter as directed on the box or make your own like my Easy Brownies.
- Pour batter into an 8x8 baking dish.
- Scatter the pieces of cookie dough randomly over the top of the brownie batter.
- Bake for 30 minutes.
- Remove from oven and cool for at least 10 minutes.
- Cut it up and ENJOY!
