Lemon dill potato salad is a healthy potato salad that is delicious. This easy potato salad recipe is a great mayo-free side dish!

Ingredients

  • 2lbs potatoes
  • 1 cup celery, diced
  • 1⁄2 cup red onion, finely chopped
  • 2 tablespoons capers (chopped)

Dressing

  • 1⁄4 cup olive oil
  • 3 tablespoons lemon juice, freshly squeezed
  • 1⁄2 teaspoon dried dill weed
  • 1/2 teaspoon dried parsley
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Peel potatoes and slice 1/4" thick.
  2. Cook just until fork tender; drain and transfer to a bowl.
  3. Add the celery, capers, and onion to the potatoes.

Dressing

  1. Combine remaining ingredients and stir well or shake in a small jar.
  2. Pour over the still-warm potatoes and stir gently to combine, until the potatoes are coated.
  3. Serve warm or at room temperature.
