Running late today! I wanted to get up early, write this post and get to some holiday baking. Yeah, that didn’t happen. I did do blog stuff, just not writing this sweet potato post.

Actually, I was working on my redirects and mobile version of Seduction in the Kitchen. You know I been switching things up on the blog. Months ago I was advised to take the dates out the URLS. Well, when you have over 350 recipes, everything that been linked elsewhere will come up as not found. Truthfully, to hunt down every link to correct it, well it is a little impossible to do.

The solution is to install a plugin that will redirect those old URLs to the new URLs. In my case the dated ones to non-dated ones. I should have done this when I switched the URL structure. That is one the reasons my stats tanked. I didn’t know that then. I learned it recently. So now I am fixing it. That was what In was doing this morning. Going through a log of my 404 redirects, pointing them in the right direction.

Anyway, I want to thank those who wrote to me after my last post, Italian Sausage Lentil Soup 400th Post. I am amazed at reaching 400 posts. I never thought I would get to this milestone, but I did. To answer those who wrote me, yes I am finally at the point where I can say the ex-husband was an idiot and moron. Goes to show, just because you are a doctor doesn’t mean you have a brain. He was a good example of that!

I am lucky, to escape his mental and emotional abuse. Come to terms with it and become a strong woman, it is a good feeling. It has taken years to realize I really am a good woman and I am a great cook. In a way, this blog is therapy for me. You, my readers, helped me realize that.

Let’s talk sweet potatoes now. Last weekend I was at the Fabulous Food show in Cleveland Ohio. I went to it last year and loved it. Chef Michael Symon of The Chew coordinates this event every year. He is a Cleveland boy if you didn’t know that.

Anyway, this year I took 3 friends with me and we had a blast. Last year I had discovered Taste of Old Country Olive oils and Vinegars. I fell in love with the white balsamic. I have used it in several recipes. They were at the food show this year, so I was able to get another bottle of it. I was torn between the peach and the vanilla fig. I decided to go with vanilla fig because I knew it would go well with the upcoming holidays.

Sweet potato kept coming to mind. I wanted to do something different. My friend Richard went with me to the show. I ran the idea past him about using this vanilla fig balsamic on a sweet potato stack. He said you need something between to balance, a soft cheese maybe. Well also at the show was a vendor that had goat cheese. I thought immediately of Montchevre Honey Goat Cheese that we sampled. The result was a perfect Thanksgiving side dish.

Serves 4     adjust servings

Sweet Potato Stacks With Vanilla Fig Balsamic and Honey Goat Cheese is an elegant and easy side dish to make that will impress your guests. It uses Taste Of Old Country's balsamic and Montchevre Honey Goat Cheese to give this dish a lively flavor. A recipe from Seduction in the Kitchen.

Ingredients

  • 2 large sweet potatos sliced thin
  • 4 TB Taste of Old Country Vanilla Fig Balsamic
  • 2 TB brown sugar
  • 1 log Montchevre Honey Goat Cheese they are about 4oz
  • 1 pinch sea salt
  • 2 TB Olive Oil

Instructions

  1. Put your sweet potato slices in a bowl and lightly sprinkle them with a little sea salt and the Olive Oil. Toss them to distribute the salt and oil.

  2. Next, in another small bowl, mix the Taste of Old Country Vanilla Fig Balsamic with the brown sugar. Mix till the sugar dissolves.

  3. Heat your oven to 375F and line a cookie sheet with parchment

  4. Place a slice of sweet potato on the parchment. On top, the sweet potato slice drizzle  little of the balsamic, 2-3 drops. Then places a small chunk of the goat cheese. Finally, top off with another slice of sweet potato.

  5. Keep stacking like that till you have at least 4 layers. You can add more if you want to each one.

  6. Drizzle on the top of each stack a few drops of olive oil

  7. Bake in the oven for 30 minutes

  8. Take out the oven, you can drizzle a little more the Vanilla Fig Balsamic on top if you like. Otherwise serve them up and ENJOY!
