Ok, so as you know I am always wanting to improve myself with photography. I finally saved up some money and bought myself a new lens for my camera. Truthfully, the lens arrived 2 days after I took these photos for these Springtime Lemon Peep Brownies. I admit I wasnt at my best when I took these photos either. That is another story.

Anyway, every book on food photography I have read, every food blogger group I belong to say to get a 50MM f1.8 lense. But they are $125. I am always on a budget! I found a nice “generic” version of the lens. I read the reviews and the reviews said there is only a small millimeter difference in the quality of the photos with this lens.

I had a $25 Amazon Gift card I was given for some survey. So the lens only cost me $25. Yes, It was only $50 on Amazon. I took a test shots with it and I have to say I am very impressed. Here let me show you:

This photo is not edited at all. I only resized it. I was on my couch, so no lighting is set up, it just a photo with my camera and this lens. I took one other lens off, which is the stock one that came with my camera, put next to me on the couch. Took the new lens out the box, put on the camera and shot this.

I think Ms, Dee here has just stepped up her photography skills with this new lens. I used it on 2 recipes and I can not believe how good the photos are. I still need to edit them. I am really excited about this new phase of photography I am now entering!

Back to these Springtime Lemon Peep Brownies. Every year I do some recipe that has a marshmallow Peep involved. Let’s see I have created:

I just realize I must alternate the years between dessert and cocktail with these Peep recipes. This year I put myself through the challenge to do my annual Peep recipe. I wasn’t feeling a cocktail this year.

Maybe it was because I been doing the SEO editing on the older posts, but one of my older recipes was stuck in my head. It was my Springtime Popcorn Clusters. It is a popcorn recipe that I had Lemon Heads candy mixed in it. I kept thinking about it that recipe. I wanted this year’s Peppe recipe to have that same Springtime feel to it.

My brain went into overdrive with this Lemon Peep Brownies. Tart meets sweet I kept thinking. The sweet marshmallow I felt would pair well with a lemon brownie recipe I had seen. With the lemon glaze that went on the brownie, it could help keep the peep in place.

 Made up a batch of this lemon Peep delight and took it to work. Which happen to have a potluck wasn’t aware of! So this was perfect! I got to meet other people in this building and they got to try my brownies. The result: They loved it!

Springtime Lemon Peep Brownies

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes
Serves 8

Ingredients

  • 1/2 cup unsalted butter softened
  • 3/4 cup flour
  • 2 eggs large
  • 1 juice of a lemon
  • 1 zest of a whole lemon
  • 3/4 cup granulated sugar
  • 1 juice of a lemon
  • 1 zest of a whole lemon
  • 1 cup icing sugar
  • 8 Peeps

Directions

  1. Preheat the oven to 350 degrees.
  2. Grease a brownie with butter and set aside.
  3. In the bowl of an electric mixture fitted with the paddle attachment cream the butter and sugar till it is light and fluffy.
  4. Add in the eggs and whip it together till all combined.
  5. Add the lemon zest and juice. Continue mixing.
  6. Finally, add the flour until it is just combined.
  7. Pour into baking dish and bake for 23-25 mins, should turn golden around the edges.
  8. Allow to cool completely before glazing.
  9. Filter the powdered sugar and whisk with lemon zest and juice.
  10. Spread the glaze over the brownies and place the Peeps on top the brownies.
  11. Let the glaze set and cut into bars, serve them up and ENJOY!

    Honestly, all I ever do with peeps is blow them up in the microwave. Does that mean I have a problem? LOL. But I bet marshmallowy goodness over a lemon brownie is delicious!
