How do you cook your grilled cheese sandwiches? Traditionally, grilled cheese cooked in butter.  Did you know top chefs make grilled cheese with mayo.

A chef friend of mine told me the secret to get that really nice golden, crispy bread in a grilled cheese sandwich is to make the grilled cheese with mayo. You spread a little mayo on the outside the bread, then place the sandwich in the hot butter, mayo side down.

The mayo just gives the grilled cheese sandwich a nice golden color and enhances the taste. I tried it and now I am hooked on making grilled cheese with mayo.

It is fun to mix things up and experiment with a grilled cheese sandwich recipe. Some of the best grilled cheese is a gourmet grilled cheese recipe. In fact, this grilled goat cheese sandwich was voted the one the 7 Fancy Grilled Cheese Recipes You Must Try in 2017!

So how did  I mix things up on and greate this gourmet grilled cheese recipe? I went to one of my favorite stores here in Cleveland called Earth Fare. I started to just look around, and think what can I do for gourmet grilled cheese?

I spotted in Earth Fare the smoked salmon trimmings. It came to me, why not use those trimmings and make a smoked salmon sandwich. What cheese would go into a smoked salmon sandwich?

Goat Cheese Recipe

So over at the cheese selection. I thought, ok maybe Brie? No, The woman behind the cheese counter came up with the idea of a goat cheese recipe.

We decided that this smoked salmon sandwich would be good with a dill goat cheese they had in the case. A goat cheese recipe for this grilled cheese recipe sounded really good.

 

Ciabatta Sandwich

This gourmet grilled cheese recipe can not just have regular bread. This needs some sort of artisan bread.  A ciabatta sandwich would be perfect for this grilled cheese sandwich.

The end results were this grilled cheese with mayo was amazing. This goat cheese recipe really is a great unique grilled cheese sandwich!

Cook Time 5 minutes
Total Time 10 minutes

Ingredients

  • 1 loaf of ciabatta bread
  • 1 small package of smoked salmon trimmings
  • 1 5 oz package of Cypress Grove Dill Goat Cheese
  • 2 tablespoons butter
  • mayonnaise (optional)

Instructions

  1. Slice the ciabatta bread in half so that you get a top and bottom portions. The slice it into sections for your sandwiches.
  2. Next, spread on the dill goat cheese onto the bottom section of the sandwich. Spread on a generous amount.
  3. After you have the dill goat cheese on the bottom layer the bread, place the smoked salmon trimmings on top the cheese.
  4. Place the top half of the bread on top the sandwich. You can spread a little mayo on the outside areas of top and bottom breads if you like, or just brush them with a little melted butter.
  5. Melt the butter in a fry pan.
  6. Once the better is melted and is starting to sizzle, carefully add the sandwich to the pan. Let the sandwich cook for about 2 minutes.
  7. Press down with the back of a spatula on the sandwich, gently and then very carefully flip the sandwich over. Let the other side now cook another 2 minutes.
  8. Again, press the sandwich down, and flip it over one more time to cook for another minute, then take out the pan and serve it up and ENJOY!
