I love spinach and salmon in dishes like salmon florentine. How can I make a salmon and stuff it with spinach? Then the answer came to me, why not make salmon into a pinwheel recipe!

What is a pinwheel recipe? Some know a pinwheel recipe as a cookie recipe. But a pinwheel recipe is anything that is twisted into a circle with layers. 

So a pinwheel recipe can be anything. I did a beef pinwheel recipe in my Spicy Italian Stuffed Eye Of Round {Gives Your Roast An Italian Flavor} So salmon pinwheels with feta and spinach would be easy to make!

 

Salmon Pinwheels

Working with the salmon for salmon pinwheels was easier to work with than beef I found out. The salmon is more flexible to shape into the salmon pinwheels. 

Plus this stuffed salmon just has a wonderful taste to it. Spinach and salmon taste wonderful together, then I added the feta for a Mediterranean taste!

Salmon and Feta Pinwheel Salmon

Spinach and Feta Pinwheel Salmon is the Mediterranean inspired stuffed salmon recipe. This pinwheel recipe is delicious and easy to make. You are going to love these salmon pinwheels!

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes

Ingredients

  • 2 teaspoons olive oil
  • 1/4 cup minced onion (about half a small onion)
  • 1 clove garlic (minced)
  • 4 cups chopped spinach
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 8 oz cream cheese
  • 2 teaspoons lemon zest
  • 1/4 cup feta
  • 1 lb salmon fillet (skinned and pin bones removed)

Instructions

  1. In a large frying pan, heat oil over medium heat. Add onions and cook until tender but not browned. Stir in garlic and chopped spinach, salt and pepper. Cook until spinach just starts to wilt. About 3 minute.
  2. Remove from heat.Add the lemon zest, cream cheese, and feta. Mix everything up well.
  3. Spread mixture evenly over salmon fillets. Roll up gently and secure with toothpicks or twine.
  4. Place salmon on a parchment lined baking sheet and bake at 375 F for about 15-20 minutes, or until fish is cooked through.
  5. Transfer to a cutting board and cool for 10 minutes before slicing into pinwheels. Then serve it up and ENJOY!
