As I mentioned in my Simple Roast Beef with Mushroom Gravy recipe, my family has roast beef every sunday. What to do with the leftover roast beef? A leftover roast beef recipe answer I came up with was simple, meat and potatoes!

Meat and potatoes go hand in hand. So why cant a leftover roast beef recipe be meat and potatoes. That was the thought behind these stuffed baked potatoes.

 

Roast Beef Stuffed Baked Potatoes is a meal in itself. Tender roast beef with caramelized onions and au jus gravy stuffed into a potato than covered with melted cheese. This recipe is a good way to use up leftover roast beef.

So where did this stuffed baked potatoes idea come from? It was from a deli that opened up near my work. This deli is known for these mammoth stuffed baked potatoes.

They had this stuffed baked potatoes that is so yummy. The baked potato filling had tender roast beef with caramelized onions and gravy. It is perfect for leftover roast beef.

Those potatoes are perfect for a leftover roast beef recipe. Plus my mom said it would be nice having recipes for leftover roast beef that isn’t hash.

Plus these stuffed baked potatoes are a meal in one. The store had a sale on baking potatoes. I knew I had roast beef left over from Sunday dinner. Viola! Roast Beef Stuffed Baked Potatoes.

Roast Beef Stuffed Baked Potatoes

Roast Beef Stuffed Baked Potatoes is a great leftover roast beef recipe. Tender roast beef with caramelized onions is the baked potato filling. These simple stuffed baked potatoes are a great meat and potatoes recipe!

Cook Time 1 hour 15 minutes
Total Time 1 hour 25 minutes

Ingredients

  • 4 large baking potatoes
  • 1 cup cooked roast beef (chopped)
  • 1 tablespoon butter
  • 1 small onion (thinly sliced)
  • 1/4 cup au jus gravy
  • 1/2 cup monteray jack cheese (shredded)
  • 1 clove garlic
  • olive oil
  • sea salt
  • butter
  • sour cream

Instructions

  1. Preheat the oven to 350F degrees
  2. Prepare your potatoes for baking. Wash and scrub them well, then put a slice in the tops lengthwise not all the way through but about at least an inch deep.
  3.  Rub the skin with olive oil
  4. Take the garlic clove, and cut the top off. Rub the cut part the clove over the skin of the potatoes.
  5. Season with a little sea salt
  6. Bake the potatoes for about 60 minutes or until slightly soft and golden brown
  7. Meanwhile, as the potatoes bake, melt the butter and saute the onions until they are nice and soft.
  8. Add the leftover roast beef and gravy to the onions and cook it till the gravy and beef are heated through. About 2-3 minutes. Stir constantly.
  9. Take the potatoes out the oven, slit the potatoes open so that you can stuff the beef filling inside each one.
  10. Add the beef filling and place back in the oven and let them back for about 10 minutes with the filling.
  11. Next, take out the oven and place the cheese on top of each one.
  12. Bake until the cheese melts on the top of each potato, about 5 minutes.
  13. Take out the oven, serve them up with some butter and sour cream and ENJOY!

We LOVE stuffed baked potatoes - and finding delicious ways to use leftovers - so this is a great recipe for us! And as far as anyone suggesting that you can't be a "real" blogger if you have a job outside of your blog... I agree with your "FU moment." Most of us have jobs and work in one way or another outside of our blogs. That's just the way is is. Good for you for having the ability to multi-task! Keep doing what makes YOU happy!! :-)

This is one of the best ways to use leftover roast beef! Way better then a sandwich, which is what we usually do with beef leftovers. Ohhh, and girl, you are super woman!! Holding down a full-time job AND working on a side business...don't let anyone get in your head. You have it ALL!
