It has been an interesting week. I just suddenly felt very overwhelmed. I will be honest, I know I have said this in the past about moving out of Cleveland.
Well, recent drama with my work really has me at 90% that I want to leave Cleveland and start all over somewhere else. I just moved into this condo, so it the only thing stopping me right now from putting in a two-week notice, pack my stuff and move back home to Pittsburgh. I am keeping my eyes open for phlebotomy jobs in Pittsburgh or even Florida.
I can’t really talk about what is going on. So let’s just say I really do not belong in Cleveland and it is time to leave. 11 years here is enough, I can take my pension with me at this point. So this time next year I do not see myself living and working anymore in Cleveland.
Why Florida? I will let you in on a secret. Yes, I can let you know this, when I first started Seduction in the Kitchen, I talked about how I was trying to impress this Persian man I was kind of seeing back then.
We broke up, well about April, we started texting each other, and we been slowly getting to know each other again. Only since I last saw him, which was three years ago, he moved to Florida. So you never know what is going to happen, so there could be a small possibility, I could move to Florida. Just have to see what happens.
I love cheesecake, it is my OMG mouth orgasm treat. I got sent from a Nopro mini cheesecake pan. Which by the way makes the cutest cheesecakes. These cheesecakes are the size of cookies. When I received this pan:
I really was inspired to make cheesecake cookies. Now I have been on a huge pineapple kick. It like lately I can not get enough pineapple, plus I read that pineapple is good for weight loss. Anyway getting back on point, I also really love the flavor of passion fruit. I do have to order either passion fruit concentrate:
or I get frozen passion fruit pulp. So a fellow food blogger that I know, Alice D’Antoni Phillips, is actually running a Pinterest week for Dole. She taking over their boards on Pinterest for holiday recipes. Well, that is when my brain is seeing the mini cheesecake pan, looking at some Dole pineapple tidbits, passion fruit concentrate, and viola! The Pineapple Passion Fruit Cheesecake Cookies was born.
To make these cookies it is actually very easy. The hardest thing I thought was for me to figure out the “crust” portion of these cheesecake cookies. Vanilla Wafer cookies were the answer. In all honesty, to try and press crumbs into the pan, was something I really did not want to do. The wafers, which is much simpler just plop them down into the pan.

- 16 vanilla wafer cookies
- 1 4 oz can of Dole pineapple tidbits drained, but reserve 1 teaspoon of the juice
- 2 ounce packages cream cheese softenened, 8
- 3 cup ⁄4 white sugar
- 2 eggs
- 1 teaspoon passion fruit concentrate
- Preheat oven to 350.
- Place one wafer cookie on the bottom of each well of the mini cheesecake pan. **See Note**
- In a medium bowl, cream together cream cheese and sugar.
- Beat in eggs, passion fruit concentrate, and reserved pineapple juice until smooth.
- Pour over wafers in the pan.
- Bake for 15 minutes or until set.
- Take the pan out the oven, let cool about 10 minutes, then with a butter knife, loosen around the edges.
- When the cookies are completely cool, push them up from the bottom the pan to remove.
- Take the metal plate off of the cookies, serve them up and ENJOY!
