Did you ever feel like your on the verge of starting something new? I have “things” going on in my life right now from personal things to work, to starting the recipe submission site Recipentrest. It feels like I am on the verge of starting something new. I truly am starting a new chapter in my life. Actually, I know on the 25th of April, I am starting something new and it will be a new chapter in my life.

I decided I want to take the bull by the horns. I spent a lot of time in the shadows waiting for things. It got me nowhere, so I am tired of waiting. I got my eyes opened the other day on Facebook, on my personal page, not Seduction in the Kitchen’s Fan page. All I did was post a photo of my hair. I wanted to do a makeover, so I did a very subtle ombre effect, but I did a little too subtle and all I did was post this:

 

What surprised me what I got a message, how need make that my profile picture and as you can see some saying how pretty I am. I am the first person to admit, I don’t think I am pretty. My weight is what keeps me down. I have had so many guys reject me because I am fat, so I don’t think I am pretty. So I took the advice and made that my profile picture, I got 28 likes for it as my profile picture. I never get that many likes for my profile pictures.

It made me realize, I need to break out the shadows and just take the bull by the horns. Be me and if someone doesn’t like it, it is them. I have let rejection, hurt and pain keep me hidden. I need to break from that. It is hard I admit it has to do with self-esteem. I have come a long way in my self-esteem. My ex-husband, he made me feel like I was ugly, he would not even go out in public with me, in fact, he really did not want anyone to know I was married to him. When you go through abuse like that, your self-esteem suffers. With that photo and all the people just liking it and commenting how pretty I am. It really helped me with feeling pretty.

I have been trying to lose weight and that helps too with self-esteem, especially when you get told you would be a knock out if you lost weight. Yes, I did have a date tell me that. Hey what can I say, it these Mediterranean professional guys that say this to me. I know it my weakness, that is the type of guy I go for. I know I need to break from that. Why I want to start new chapters. Realizing it too is the being on the verge of starting something new.

As I been eating healthier as part the trying to lose weight, I come to come to love baked oatmeal. I always liked oatmeal, but with baked oatmeal, I found ways to make with more protein, like this one, or cut the sugar down like I did with the Pineapple Blueberry Oatmeal. I wanted to do a protein based oatmeal when I spotted peanut butter granola at the store. Tinkering around with it, I came up with a nice power protein baked oatmeal I love on Sunday mornings.

Peanut Butter Baked Oatmeal

A power protein packed baked oatmeal made with great taste of peanut butter! It is a healthy start to your day from Seduction in the Kitchen.

Cook Time 20 minutes
Total Time 30 minutes

Ingredients

  • 1/4 cup butter (melted)
  • 1/2 cup creamy peanut butter (natural preferred)
  • 1/4 cup brown sugar
  • 1/2 teaspoon vanilla
  • 3/4 cup almond milk
  • 1 egg
  • 1 cups quick-cooking oats
  • 1/2 cup steel cut oats
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup semisweet mini chocolate chips
  • 1/4 cup raisins
  • 1/2 cup Nature's Valley Peanut Butter Granola

Instructions

  1. Preheat the oven to 350 degrees and spray 7x11 baking pan with a non stick cooking spray.
  2. Mix all ingredients except the granola and blend well.
  3. Spread evenly in pan.
  4. Sprinkle the granola on the top the oatmeal, pressing it in lightly.
  5. Bake 20 minutes til edges are golden brown.
  6. Take it out the oven and let cool slightly, Then scoop some out, put into a bowl and ENJOY!
