The Keto diet is very popular, so there is a need for no carb recipes. The only way I can think to do no carb recipes is by making them vegan no carb recipes. There are plenty of no carb recipes that are also vegan recipes.

I need something that is tasty, so what about creating a vegan panini? Now I know you might be thinking, No Carb Vegan Panini?

Vegan recipes aren’t as bad as you might think. Actually, the most popular recipe here on Seduction in the Kitchen is a vegan recipe, the Vegan Lemon Garlic Angel Hair Pasta.

I really wanted to think outside the box for a carb-free vegan panini. Portabello mushrooms just simply intrigue me. Most will use them in place of meat in sandwiches. These would be perfect for “bread” in no carb recipes.

To make this No Carb Vegan Portabello Panini pop with flavor, I knew the veggies inside this panini recipe a good marinade.

No Carb Vegan Portabello Panini

No Carb Vegan Portabello Panini is a vegan panini that tastes great! This low carb recipe uses portabello mushrooms to make it part of the no carb recipes. This vegan panini is perfect for those that are on a low-carbohydrate diet!

Prep Time 5 minutes
Cook Time 5 minutes
Total Time 10 minutes

Ingredients

  • 4 portabello mushroom caps, stem removed
  • 1 small seedless cucumber, sliced
  • 4 oz sliced black olives, drained
  • 1 small onion, quartered
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1/4 cup Brianna's Real French Vinaigrette Dressing

Instructions

  1. In a small bowl, add your veggies, except for the mushrooms, leave them aside.
  2. Pour Brianna's Real French Vinaigrette Dressing over the veggies and make sure they are well coated, let them marinate for at least an hour in the dressing.
  3. Heat up your panini press, brush it with a little olive oil.
  4. Brush a little of the olive oil on the tops of the portabellos.
  5. Place 2 of the portabellos on the panini press so that the round side is on the grill and the underneath of the mushroom is facing up.
  6. Put the veggies on top of the portabellos.
  7. Then put the other two portabello caps on top the veggies, so all sandwiched together.
  8. Slowly pull down on the panini press. The mushrooms will want to try and split and veggies may try to come out. Bringing the press down slowly does help with that.
  9. Cook the mushrooms for about 2 minutes.
  10. Take them out the press, and ENJOY!

any ideas how to make this without a panini press? i don't have one, and don't really want to get one.

There is an old way I found online for you: Grease a heated stovetop skillet with oil, butter or cooking spray and place the assembled sandwich in the center. 2. Lay another pan, plate or lid on top of the sandwich. Weigh the press down with a heavy can or a full tea kettleā€”or just push down on the surface as the sandwich cooks. Another I think would work best with this recipe is this: Assemble your sandwich. (If you need ideas, we've got 50 favorites.) Wrap your sandwich completely in foil. Grill your foil-wrapped sandwich over medium heat for about 3 minutes per side, pressing down with a spatula every once in a while. Try not to burn yourself on your perfectly pressed sandwich.
