Girl’s Night In: The Italian Punzone Vodka Tart

Spring is here, but the bi-polar weather is still sticking around. I am leaving for vacation but I am just going to my parents in Pittsburgh. So it would be nice if it would show some warmth while I am there. This time my trip to Pittsburgh is actually a relaxing one now that my dad is better, in fact, he got the clearance to go back to work. So things are starting to get back to normal for my family.

So with that chapter of my life over and done with, it times to start on new chapters. One is I have decided to not to renew the Lovely Pink Diva domain. It served a purpose but my heart isn’t into that blog like it is with this. Truthfully, I think I should not have tried to resurrect it. It will convert to a blog spot URL when the domain expires, I think I just have it as product reviews I do, and keep it simple like I do with The Recipes of Disney.

Change can be scary, but change is necessary sometimes, like the weather, we need winter, spring, summer, and fall. All those seasons the weather is changing, though recently the weather has been bipolar I know. In that respect of changing, my Girl’s Night In Series is coming to an end. I got to work with some wonderful alcohol companies in creating recipes for you guys. I hope I was able to get you to like some new liquors as I did this series. It is time to move on to my next series idea.

How to end this How to have a girl’s night in? A drink, of course, it is a way to toast this popular series goodbye. Punzone Italian Vodka was so smooth when I got it. From the website:

Limoncello kept coming to my mind, but to make good Limoncello, you need to age it. I saw a recipe for a tonic, a friend was sick and I admit I was looking for a good old fashion hot toddy for him to drink, when I saw this Italian version of a hot toddy, that was when I was inspired. What if we did a slow simmer of simple syrup, lemons, and a vanilla bean, then add the vodka?

It turned into a great idea. It is Limoncello, but without aging, with the vanilla bean, it gave a different spin. I asked my friend what can we call it, since it, not a true Limoncello, the Italian Tart was born. It a bit easier to make than traditional Limoncello, just like a tart is in real life. I admit I like the play on the words.

Girl's Night In: The Italian Punzone Vodka Tart

Preparation 10 minutes
Cook Time 15 minutes
Total Time 25 minutes
Serves 4     adjust servings

Limoncello without aging, can it be possible? Yes, it can be! This recipe is a quick way to have a Limoncello, it made from Punzone Italian Vodka. A recipe from Seduction in the Kitchen.


  • 6 lemons sliced
  • 4 cups water
  • 2 cups sugar
  • 1 vanilla bean
  • 1/4 cup honey
  • 2 cups Punzone Vodka


  1. Dissolve the sugar in the water and bring to a boil.
  2. When it starts boiling add the lemon slices, honey and vanilla bean. Stir, then reduce heat for the mixture to low so that it can simmer. Allow it to simmer for about 2 hours. Stirring every once in awhile.
  3. After about 2 hours of simmering on low, add the 2 cups of vodka.
  4. Continue simmering for another hour, stirring every once in awhile.
  5. After it that hour, take it off the heat and strain out the lemons and vanilla bean. Put into into a glass carafe or pitcher and let it chill in the refrigerator.
  6. Once it has chlled, rim a glass in sugar if you like and ENJOY!
