I have started labs, I have been a head phlebotomist. Let’s put this way I have done more than anyone else in the area of phlebotomy than my co-workers. So that is why my work approached me and I accepted this new adventure in my phlebotomy career.

It is girl scout cookie time around northeast Ohio. My favorite girl scout cookie is the Somoas or as they are now known as Caramel Delites. Though I admit I thought they were Girl Scout Caramel Delights, but I saw it is actually Delite.

 

Enough of the spelling lesson. The caramel delites girl scout cookies has a shortbread base. Then it’s topped with the toasted caramel coconut. Followed by a drizzle of rich chocolate.

 

Girl Scout Thin Mint Cookies are the most popular cookie. The girl scouts Somoas cookies are a close second. Tagalogs are in the third choice as what people love in these cookies from the Girl Scouts.

I took my love of the Girl Scouts Somoas and transform it into the Girl Scouts Caramel Delites Bundt Cake. Do you want to know a secret?

 

This cake version of caramel delites girl scout cookies was a mistake. Yes, you read that right, a mistake.

Saving the cake

So let me explain how the mistake happened. I was making another type of bundt cake. When part the cake stuck in the bundt pan. When finally got loose, the top of the cake was all torn up.

 

I was making the cake for a co-worker so I had to save the cake. I looked in my pantry to see what could use to save this cake. I did not have time to make another cake, that is why I wanted to save it.

I spotted caramel and I saw coconut. Then it hit me, let’s turn this cake into a giant Caramel Delites Girl Scout Cookies. It had to work, I had no choice.

 

So I made the coconut caramel topping that is the essential part of the Girl Scouts Somoas. Spread it on the cake. But it still needed that chocolate drizzle so I could call it a caramel delights recipe.

 

A drizzling the chocolate on this yummy cake, it looked like a huge Girl Scouts Caramel Delites! Everyone at worked loved this bundt cake recipe. So I knew it was a winner.

Caramel Coconut Delight Bundt Cake

Caramel Coconut Delight Bundt Cake is the cake version of the famous Girl Scout cookie. One bite of this yummy cake and you will fall in love with it.

Prep Time 10 minutes
Cook Time 40 minutes
Total Time 50 minutes

Ingredients

  • 1 box French Vanilla Cake Mix
  • 1 box (3 oz) instant coconut pudding
  • 1 container (2 oz) vanilla yogurt
  • 1 cup shredded coconut
  • 2 tablespoons caramel sauce
  • 1/4 cup chocolate chips

Instructions

  1. Make the cake according to the directions. Add the1/2 cup the shredded coconut, yogurt and pudding mix to the batter and mix well.
  2. Pour the batter into a well-greased bundt pan. Bake the cake according to the box directions. Make sure you follow bundt for the times. 
  3. Take the cake out the oven, remove from the pan and let it cool.
  4. After the cake has cooled. Toast the remaining coconut in the oven. Heat the oven to 350F. On a parchment lined cookie sheet toast the coconut for about 5 minutes, till the coconut turns golden.
  5. Melt the chocolate chips
  6. Next, drizzle the caramel over the top the cake.
  7. Next, drizzle the melted chocolate over the cake.
  8. Finally, top it off with the toasted coconut
  9. Let the chocolate harden. Then slice it up and ENJOY!
