My father loves chocolate cookies. For years looking for an easy chocolate cookie recipe, he would enjoy, took many trials before finding the perfect chocolate cookie.

Why an easy chocolate cookie recipe? It was so my mom could make it if I wasn’t there. My mom can bake, but she not patient. So easy cookie recipes are perfect for bakers like her.

When comes to Christmas cookie ideas, a chocolate cookie should be one of those ideas. Everyone likes chocolate right?

When comes to Christmas flavors peppermint chocolate is one that comes to mind. Peppermint and chocolate go very well together. For a Christmas cookie recipe, what type of chocolate would be good for a peppermint chocolate cookie?

There is not a lot of dark chocolate cookie recipes. Yes, there are chocolate cookies but they use Dutch cocoa.

Dark chocolate cookies I felt would balance the peppermint chocolate flavor I wanted for these Christmas cookies. Plus I was using peppermint crunch as a topping, the white and red look nicer on dark chocolate.

These dark chocolate cookies were not only an easy chocolate cookie recipe, but they were very tasty. I put the plate of cookies out and they disappeared within minutes.

Dark Chocolate Peppermint Crunch Cookies

Dark chocolate peppermint crunch cookies are an easy chocolate cookie recipe. The peppermint chocolate in this cookie recipe tastes amazing. Perfect for Christmas cookie ideas!

Prep Time 10 minutes
Cook Time 8 minutes
Total Time 18 minutes

Ingredients

  • 1 1/2 cups packed brown sugar
  • 3/4 cup butter soften
  • 12 ounces dark chocolate chips
  • 2 large eggs
  • 3 cups flour
  • 1 1/4 tsp baking soda
  • 1 tsp salt
  • 1/2 cup crushed peppermint candies Andees has a good one that I like to use

Instructions

  1. Cream the brown sugar and butter together till nice and fluffy. Set aside

  2. Melt the chocolate chips, then add the melted chocolate to the butter mixture.

  3. Next, add eggs one at a time, beating well after each addition.

  4. Stir in flour, baking soda and salt.

  5. Finally, add the peppermint crunch. Stir this in by hand.

  6. Drop by rounded teaspoon onto ungreased baking sheets.

  7. Preheat the oven to 350F and bake for 6 to 8 minutes or until edges are set

  8. Cool on baking sheets for 1 minute. Remove unto wire racks and cool.

  9. Serve them up and ENJOY!
