I am doing something a bit different here. I am posting 2 recipes at the same time! I am posting this recipe that was inspired by The Flamingo Resort in Las Vegas and I am also posting Bacon Chicken Caesar Salad Pizza that was inspired by Caesar’s Palace in Las Vegas.

I was approached by VEGAS.COM about creating unique pizza recipe for them to celebrate International Pizza Expo in Las Vegas that takes place March 7-10, 2016. This is a huge event in Vegas because it is the largest pizza show in the world. Pizza makers from all over compete at this expo every year.

VEGAS.COM asked that I come up with a pizza that is inspired by one the resorts. Well me being a typical Libra, I could not make my mind up so I actually created 3 pizzas. The two that I am posting now and a third which is actually inspired by NEW YORK NEW YORK Resort.

Which let’s just say that one is inspired by a famous sandwich in New York are what that pizza will be like! These two have a more common theme that pizza, which is they are what I call a salad pizza. I have had salad pizzas, and they are really good. It is unusual, but tasty twist on pizza.

When I think of Vegas, images of vintage mobster era 1950’s Vegas comes to mind. That is the Flamingo. It is the first resort casino in Vegas. If I could, I would love to have seen this resort back then. The old photos I found in a Google search shows how timeless this resort truly is.





What is the Flamingo in Las Vegas? It has that vivid pink logo. It flashes with Floridan colors.

The outside looks like the headdress of a Vegas showgirl. That is what I wanted to use for inspiration to create a pizza that is The Flamingo. I wanted a Florida flavors, which is citrus and seafood, but with a sophistication that bursts with flavor.

When I went to the store to see what I can do for this pizza, I admit I was thinking grapefruit. Then I spotted this bottle of dressing standing out from in the produce department. I was getting a nice yogurt based Caesar dressing I knew they had for the Caesar’s Palace inspired pizza.

Amongst the dressings, there from Marzetti was the new vineyard dressing line. They have a Citrus Pinot Noir. There was samples being given out, so I tried a little and wow! It was perfect for the “sauce” for this pizza. It was the perfect balance of citrus and Pinot Noir.

What cheese would be on this pizza that would go well with “sauce”?  I was in the “fancy” cheese department in the supermarket, there was a special today on Sartori cheese. What I saw was that Sartori had some different flavors for the cheese, like espresso!

So I talked to the woman in the cheese department, told her what I was doing. She suggested the Sartori Balsamic cheese and also a goat cheese. She gave me a sample the Sartori Balsamic cheese and it was wonderful, I felt yes this would be good with the Marzetti Citrus Pinot Noir, plus adding in the goat cheese would be good to balance it out with imitation crab.

Citrus Pinot Noir Crab Pizza

Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

A Citrus Pinot Noir Crab Pizza Inspired by the Flamingo Resort in Las Vegas is a Floridian flavor and sophistication in a pizza.


  • 1 pizza dough shell (, baked)
  • 2 cups of romaine lettuce (, chopped)
  • 1/4 cup Marzetti Citrus Pinot Noir dressing
  • 2 tablespoons Marzetti Citrus Noir dressing
  • 1/4 cup grated Sartori Balsamic cheese
  • 2 ounces crumbled goat cheese
  • 4 ounces imitation flaked crab meat


  1. Brush the 2 tablespoons of the Marzetti Citrus Pinot Noir dressing onto the pizza shell.
  2. Spread the grated Sartoni Balsamic cheese over the shell and bake at 350 for about 5 minutes, just long enough to melt the cheese.
  3. Toss the lettuce with the remaining dressing.
  4. Take the pizza out the oven and spread the dressing covered lettuce over it.
  5. Sprinkle on the crumbled goat cheese and flaked crab.
  6. You can grate a little more of the Sartoni Balsamic on the top.
  7. Cut it up and ENJOY!
