Caramel Coconut Delight Bundt Cake is the cake version of the famous Girl Scout cookie. One bite of this yummy cake and you will fall in love with it. A recipe from Seduction in the Kitchen.
I have some news. For my phlebotomy career, I will be starting a new chapter in it. Long story short, about a week ago I was approached at work about starting a new family health center lab for them. I am the only one who has a very extensive lab background.
I have started labs, I was a head phlebotomist. Let’s put this way I have done more than anyone else in the area of phlebotomy than my co-workers.
After thinking about it for a day, I told them I would put my name into the hat for the position. I applied at 8 am and by 4 pm I was offered the job. I have never seen a position get approved so quickly. So on February 17th will be my last day at my current FHC. On the 20th I will begin this new FHC.
I have mixed feelings about this change. Yes, I will miss my patients I have right now. I am the most requested phlebotomist at my FHC. The few patients I have seen and told this too are upset that I will be leaving. I already had one say she is following me to the new FHC. Most are elderly and have transportation problems, so they have no choice but to stay with the FHC I am currently with.
I know everything happens for a reason. If you been reading Seduction in the Kitchen, you know I have had many issues with the immature co-workers, or as I call them, “the clique.” I am 41, they are 20 somethings. They think it is a party place, to me this is my job, not a party. Unfortunately, management is friends with them so they get away with many things.
One the best examples of what I have gone through with these girls was what I wrote on Crock Pot Cheese Soup. Things did get better when all but 1 left. It was funny when they were all there, we were the worse FHC in the system. After 2 of them quit, and they hire people more like me, we became the best FHC.
Then, we became a hospital, and the management decided to not only hire the 2 that left back but promoted one of them. Slowly things have been going downhill again. Friendship sometimes can blind people to what reality is, that is what happens at my work. What is funny, it is only a few girls that cause these headaches. It isn’t like it is the whole lab.
Everything happens for a reason
I was seriously done with work. For me, June could not come quick enough. Why? Because I was waiting till June to look to move out of Ohio and start new a new job somewhere else. I can not take the circus atmosphere that surrounds me every day there. Suddenly out of nowhere, I am being asked to start and open a lab.
As I said it mixed feelings, yes I will miss my patients. Yet this will allow me to show the system what I really can do. My skills will show through and not be hindered by a toxic atmosphere of immaturity. As I say, change is good. Also, everything happens for reason.
Caramel Coconut Delight Bundt Cake
Ironically, I was the one who would be the one who remembers everyone’s birthday at work. I usually made them a little cake or cupcake. I am, for the most part, the go-to person at the lab. They don’t know what to do, they ask me. Which is one of the reasons “The Clique” doesnt like me and causes problems.
I decided since we did become a hospital, and the lab did double in personal, to do a monthly birthday cake. For January, I came up with this Caramel Coconut Delight Bundt Cake. It was suggested I do something with coconut, and I started playing around.
When coconut was suggested for the cake. I kept thinking about Samoas from the Girl Scouts. So I made my mind up I wanted to make a cake that was similar to the Girl scout cookie. I took to work and the birthday girls loved it, plus the cake was devoured within an hour.
I am going to miss making goodies like this and bringing to work. There are co-workers I will miss as well. I know they will miss me too. “The Clique Trio” I will not miss at all.
Caramel Coconut Delight Bundt Cake is the cake version of the famous Girl Scout cookie. One bite of this yummy cake and you will fall in love with it.
- 1 box French Vanilla Cake Mix
- 1 box instant coconut pudding 3 oz
- 1 container vanilla yogurt one those little Yoplait containers, they about 2 oz or so.
- 1 cup shredded coconut
- 2 tablespoons caramel sauce
- 1/4 cup chocolate chips
Make the cake according to the directions. Add the1/2 cup the shredded coconut, yogurt and pudding mix to the batter and mix well.
Pour the batter into a well-greased bundt pan. Bake the cake according to the box directions. Make sure you follow bundt for the times.
Take the cake out the oven, remove from the pan and let it cool.
After the cake has cooled. Toast the remaining coconut in the oven. Heat the oven to 350F. On a parchment lined cookie sheet toast the coconut for about 5 minutes, till the coconut turns golden.
Melt the chocolate chips
Next, drizzle the caramel over the top the cake.
Next, drizzle the melted chocolate over the cake.
Finally, top it off with the toasted coconut
Let the chocolate harden. Then slice it up and ENJOY!
