My local grocery store had frozen salmon on sale. I really want to do healthy salmon recipes. Salmon is wonderful to work with especially in healthy recipes.

One way to do an easy salmon recipe is by putting salmon in salad recipes. However, not every salad would be good with salmon. That is when I thought of a Caprese recipe.

Why a Caprese recipe with salmon? You have heard of Caprese chicken, so why not substitute salmon for the chicken! Plus by using a Caprese recipe it makes this an easy salmon recipe.

What I really love about this healthy recipe is that it is an easy salmon recipe. Truthfully this salmon recipe can be made in under 20 minutes. So if you want healthy salmon recipes, you have to try this Caprese salmon!

Caprese Salmon

Caprese Salmon is an easy salmon recipe. This Caprese recipe combines salmon with a balsamic glaze for a healthy salmon recipe. If you want salmon in salad recipes then look no further then this delicious salmon.

Prep Time 10 minutes
Cook Time 8 minutes
Total Time 18 minutes

Ingredients

  • 4 salmon fillets
  • mixed baby greens
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons packed brown sugar
  • 1 tablespoon stone ground Dijon mustard
  • 2 teaspoons olive oil
  • 8 leaves large basil (roughly chopped)
  • 1/2 pint of cherry tomatoes (sliced)
  • 1/4 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 450°F.
  2. Line a baking sheet or shallow baking dish with foil., and place the salmon fillet, skin-side down on the baking sheet.
  3. Stir together the glaze ingredients and spoon it over the salmon.
  4. Mix the basil, 1/8 cup the cheese, and cherry tomatoes together. The spoon it over the salmon.
  5. Bake for 11-12 minutes per inch, until the fish flakes with a fork.
  6. Use a thin spatula to remove the fish from the pan, and try to leave the skin behind on the foil.
  7. Serve the salmon on a bed of mixed baby greens, sprinkle the remaining cheese over the salmon and ENJOY!
